BBQ Honey Soy Carrot Skewers

Fire up the BBQ and get creative with these delicious Honey Soy Carrot Skewers! Crunchy and golden with a tasty sticky sauce, you’ll be making them by the dozen.

Ingredients

  • 2 large carrots, peeled into ribbons

  • 2 Tbsp honey

  • 2 Tbsp soy sauce

  • Oil, for drizzling (such as sesame or olive oil)

  • 4x skewers

  • Toasted sesame seeds & sliced spring onion, to serve (optional)

Method

  1. Preheat your barbecue.

  2. Peel the carrots into ribbons using a vegetable peeler.

  3. Overlap two carrot ribbons then fold over several times into a ‘zig-zag’ shape. Thread about four of the bunched carrot ‘zig-zags’ onto the skewers.

  4. Combine the honey and soy sauce together in a small bowl.

  5. Drizzle the carrot skewers with some oil, then brush over half of the honey soy mixture

  6. Barbeque the skewers for 3-4 minutes each side, until charred. Brush the remaining honey soy mixture over the skewers as they cook.

  7. Serve them topped with the sesame seeds and spring onion.
