Cheats Cookie Cheesecake

6x CookieTime x Foursquare cookies
75g butter, melted
500g cream cheese
1 can condensed milk
Method
Preheat your oven to 170°C. Grease and line a 20cm cake tin with baking paper.
Add the cookies to a food processor and blitz into a coarse crumb. Tip roughly ¾ of the cookie crumbs into a medium bowl (reserve the remaining crumbs), along with the melted butter. Toss together, then press firmly into the base of the prepared cake tin. Bake for 10 minutes, until lightly browned. Wash and reserved the food processor.
Add the cream cheese and condensed milk to the food processor and blitz together, until smooth. Pour the mixture over the base, then sprinkle over the reserved cookie crumbs. Return to the oven for a further 18-20 minutes, until golden with a wobble in the centre.
Set the cheesecake aside to cool completely in the fridge, before removing from the tin and serving.
